Thai Shrimp Red Curry 


Thai Shrimp Red Curry with All the Veggies 🍛🦐🧅🧄🫑🥕🌶️ Looking to spice up your dinner routine? Try this vibrant and aromatic red shrimp curry that’s sure to impress!

Ingredients:

1 lb large shrimp, peeled and deveined
2 tbsp red curry paste
1 can (14 oz) coconut milk
1 tbsp fish sauce
1 tbsp brown sugar
1 red bell pepper, sliced
1 cup zucchini, sliced
1 cup carrots, sliced
1 small onion, chopped
3 cloves garlic, minced
1 tbsp ginger, minced
2 tbsp vegetable oil
Fresh basil or cilantro for garnish
Cooked jasmine rice, for serving.

Instructions:

•Heat vegetable oil in a large pan over medium heat. •Add chopped onion, garlic, and ginger, and sauté until fragrant and onion is translucent.
•Stir in the red curry paste and cook for another 1-2 minutes to release the flavors.
•Pour in the coconut milk, fish sauce, and brown sugar.
•Stir until well combined.
•Add the sliced red bell pepper and zucchini, cooking for about 3-4 minutes until vegetables are tender-crisp.
•Add the shrimp to the pan, cooking until they turn pink and opaque, about 3-5 minutes.
•Taste and adjust seasoning if needed. Garnish with fresh sliced jalapeño, green onions or fresh basil.
•Serve hot over jasmine rice and enjoy!
