Tuna Salad Lunch


Ingredients

  • 1 can (about 5 oz) tuna, drained (use light or white tuna, as preferred)
  • 2 hard-boiled eggs, chopped
  • 1/4 cup mayonnaise or Miracle Whip (adjust to taste)
  • 1 tablespoon Dijon mustard (optional)
  • 1/4 cup celery, diced
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • Lettuce leaves or bread (for serving)

Instructions

  1. Prepare the Ingredients:
    • Hard boil the eggs, cool, peel, and chop them.
    • Drain the canned tuna.
  2. Mix the Salad:
    • In a mixing bowl, combine the tuna, chopped eggs, mayonnaise, Dijon mustard (if using), diced celery, and lemon juice.
    • Stir gently until well combined.
  3. Season:
    • Taste and season with salt and pepper as needed.
  4. Serve:
    • Serve the tuna salad on a bed of Spinach and on Toasted Bread. Enjoy!
